Cream of Crab Soup

Ingredients

  • 1 lb blue crab claw meat
  • 4 C half & half
  • 1 C chopped yellow onion
  • 1⁄3 C flour
  • 4 tbsp unsalted butter
  • 1⁄2 tbsp Old Bay
  • Kosher salt and ground black pepper
  • Dry cooking sherry

At A Glance

Melt butter in a 4-quart saucepan over medium heat.

Add onion and cook until softened.

Add flour and Old Bay, then continue cooking for 3 minutes.

Whisk in half and half, stirring constantly.

Add in crab meat.

Season with kosher salt, ground pepper, and a drizzle of sherry.

INSTRUCTIONS

Add onion and cook until softened (around 5 minutes).

Add flour and Old Bay, then continue cooking for 3 minutes.

Whisk in half and half, stirring constantly, then bring to a boil, cut down heat to medium-low, and let simmer. Stir occasionally until thick (about 5 minutes).

Add in crab meat.

Cook for 1-2 more minutes until soup is heated through.

Season with kosher salt, ground pepper, and a drizzle of sherry.
