Ingredients
- 3-1/2 cups of fresh tomatoes
- ¼ cup chopped onion
- 2 T butter
- 3 T flour
- ½ t sugar
- 1 t salt
- 1/8 t pepper
- 3 cups milk

Combine tomatoes with chopped onion. Simmer together 20 minutes. Rub through sieve, and set aside.
Melt butter. Blend in flour, sugar, salt and pepper. Gradually add milk, stirring to keep smooth. Cook ten minutes.
Add tomato puree very slowly to cream sauce, stirring constantly.
INSTRUCTIONS

In upper half of double boiler or in a heavy skillet, melt butter. Blend in flour, sugar, salt and pepper. Gradually add milk, stirring to keep smooth. Cook ten minutes.
Add tomato puree very slowly to cream sauce, stirring constantly. Heat gently to boiling point, but do not boil. Serve at once.
Variation: use another vegetable in seasonal supply, e.g. zucchini
