One-pot Baked Bean Bowl

Ingredients

  • Onion Chopped
  • Carrot Chopped
  • Green Pepper Chopped
  • Little Red Tomatoes
  • Baked Beans in Molasses
  • Zucchini Chopped
  • Olive Oil
  • Paprika (Optional)

At A Glance

Pour a bit of olive oil to cover the bottom of the saucepan, sprinkle in some smoked paprika (optional), add chopped up onion, carrot, green pepper and a few little red tomatoes. Saute until onions are soft but not burnt. Add canned baked beans (in molasses). Simmer until bubbling, add zucchini, simmer until soft.

INSTRUCTIONS

In this chilly weather, I wanted “comfort food” so I made this easy recipe and enjoyed it with toasted French bread & butter. The quantities depend on how many you want to serve but, as a guideline, the onions should cover the bottom of the pot.

If you want a meat meal, start with chopped up bacon and/or sausage and cook until done before putting in the onions and other veggies.
