Greek Salad

INGREDIENTS

  • 1 cucumber, sliced
  • 1/2 red onion, sliced
  • 1 pt. cherry tomatoes, halved
  • 1 cup Kalamata olives, halved
  • 6 oz. feta, cubed
  • 2 Tbsp. red wine vinegar
  • Juice of 1/2 lemon
  • 1 tsp. dried oregano
  • Salt & pepper to taste
  • 1/4 cup olive oil

DIRECTIONS

  1. Toss cucumber, onion, tomatoes, and olives in a large bowl. Gently fold in feta
  2. Whisk vinegar, lemon juice, oregano, salt, and pepper in a small bowl. Slowly add oil, whisking until smooth.
  3. Drizzle dressing over salad and toss to combine.
