INGREDIENTS
- 1 cucumber, sliced
- 1/2 red onion, sliced
- 1 pt. cherry tomatoes, halved
- 1 cup Kalamata olives, halved
- 6 oz. feta, cubed
- 2 Tbsp. red wine vinegar
- Juice of 1/2 lemon
- 1 tsp. dried oregano
- Salt & pepper to taste
- 1/4 cup olive oil
DIRECTIONS
- Toss cucumber, onion, tomatoes, and olives in a large bowl. Gently fold in feta
- Whisk vinegar, lemon juice, oregano, salt, and pepper in a small bowl. Slowly add oil, whisking until smooth.
- Drizzle dressing over salad and toss to combine.
