Dressing Ingredients
- 1/2 cup cider vinegar
- 1 tsp garlic, minced
- 1/4 tsp hot pepper sauce
- 1/2 cup pureed mango
- 1 1/2 TBS sugar
- 1 TBS fresh lime juice
- 1/4 cup olive oil
- 1/2 TBS sesame seeds
- salt & pepper to taste
Salad Ingredients
- 2 pounds of baby spinach, washed and dried
- 1 TBS olive oil
INSTRUCTIONS
In a blender, pulse together vinegar, garlic, hot pepper sauce, mango, sugar and lime juice.
Slowly add olive oil and sesame seeds.
Season with salt and pepper to taste.
May be prepared in advance and kept in refrigerator (bring to room temperature and shake well before using).
In a large skillet (on medium high setting), heat olive oil, add spinach and sauté (stirring constantly) until just wilted.
Drain and serve with a small amount of dressing drizzled on top.
Additional dressing may be served separately for guests to add more if desired.
