Ingredients
- 2 cups sweet potatoes
- 1 cup sugar
- 2 eggs
- 1 cup milk
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 teaspoon vanilla
- 1/2 cup shredded coconut *optional
- 1 uncooked pie crust

Pre-heat oven to 350°
Boil 3 to 4 sweet potatoes skin on about 40 min.
Blend all ingredients except the coconut until smooth.
Fold in coconut.
Pour into uncooked pie crust.
Bake in preheated oven for 55 min.

Boil 3 to 4 sweet potatoes skin on about 40 min.
Remove, drain and cool.
Blend all ingredients except the coconut until smooth.
Fold in coconut.
Pour into uncooked pie crust.
Cover crust edges with foil to prevent burning.
Bake in preheated oven for 55 min.
Remove foil for the last 15 min.
The pie will puff up and then settle down once cooled. Serve with whipped cream!
